I made Chocolate Chip Zucchini Muffins for my hard-working guys this morning! That’s one yummy way to get rid of zuchinni…hee hee!
How-To: Yield: 2-dozen muffins
1/2 cup softened butter or marg (1 stick)
1/2 cup oil
1-3/4 cup sugar
1/2 cup milk
2-1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1/4 cup cocoa
2 cups grated zucchini
1 cup chocolate chips (more or less)
Blend butter, oil & sugar. Add eggs one at a time, mix well. Sift dry ingredients (flour, soda, salt, cocoa) in another bowl and add alternately with milk to creamed butter/sugar mixture.
Add approx 2-cups grated fresh zucchini and chocolate chips. Place batter into paper lined muffin/cupcake tins. Bake at 375 degree F for 20 – 25 minutes. Frost if desired…YUM!
