Chocolate chip cookies are a fav around my house. Psssst! I prefer chewy oatmeal raisin. Nevertheless…if you find yourself with little time to bake a few dozen chocolate chip cookies, I have a solution! Why not make blonde brownies (aka choc chip cookies in a pan). I made the first batch first thing in the morning to take to my mom. Now, you don’t think I can get away with baking for mom and not leave any home for the poor starving daddy & daughter? Actually, my motivation to bake a second batch of blonde brownies was that hubby has a meeting in Ann Arbor today…so he can bring ‘fav No. 1 son’ some brownies too! I love when a plan comes together!
RECIPE:
2/3 cup marg/butter, softened
2-1/2 cups brown sugar
3 eggs
2-2/3 cups flour
2-1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 cup walnuts ***optional***
1 cup (approx 6 oz) chocolate chips
Cream butter; add eggs, br sugar & vanilla. Mix well. Add dry ingredients: flour, b powder, salt and mix well. Add vanilla, choc chips (and optional nuts).
Preheat oven to 350 degrees F. Grease/flour 13X9-inch pan. Spread batter in pan. Bake for approx 30 minutes until edges are brown, but more importantly, center is baked! I’ve had to bake the ‘brownies’ for an additional 5 minutes.
